Celebrate Summer: cool off with a shot

The 4th of July may be over, but summer is just beginning. We were inspired by the Americana aesthetic of this inviting seaside cottage to remind us to keep our patriotic spirit on fire while trying to cool off.

The best way to cure the “I just had the best holiday ever and now it’s over” blues is to keep celebrating all summer long.  When I think about summer as a kid, one of the first things that comes to mind are those delicious red, white, and blue popsicles. You remember them right?

The combination of blue-raspberry, cherry, and lemon made for the perfect treat whether you’d just gotten out of the pool or were about to take on the night to catch fireflies. Back then I could probably eat a whole box in one sitting. Now that I’m a “grown up,” I’ve found a more adult way to enjoy my favorite treat.

While working as a bartender, I discovered the “Rocket Pop shot.” They quickly became a high-demand request by my friends and other customers who referred to them only as the “red, white and blue popsicle shots.” So if there was any confusion, the resemblance really is that uncanny. Here’s how you can make them at home:

Pour the following into a cocktail shaker, shake well, and pour into shot glasses. Bottoms up!

1 oz Bacardi Limon

½ oz raspberry liqueur (examples: Bols; Chambord)

a splash of sour mix and a splash of sprite

*this is the amount for one shot. For more, multiply!

For the bold, I’m sure these could be served as a poolside beverage (just increase the amount of sour and sprite and pour over ice). Another fun idea could be to turn this shot into a popsicle itself! Just make sure you separate the adult popsicles from the old fashioned ones J If you try any of these alternatives, let us know how it is!

Who says the American Summer has to end on July 5th?? Not us!
